Pocky Chocolate Cage:

Ingredients:

  • Pocky
  • 200 ml milk
  • 500 ml whipping cream
  • 6 eggs, 70g icing sugar
  • 250g dark chocolate
  • 4 sheets gelatine
  • 3 bananas
  • Juice of ½ lemon
  • 1 teaspoon vanilla extract
  • 50ml water

The Pocky Chocolate Cage is a beautiful and decadent dessert consisting of a chocolate cream, topped with a banana mousse, surrounded by a Pocky Cage. To make the chocolate cream part, heat milk and cream in a saucepan over medium heat. In a bowl, beat 6 egg yolks and sugar together, and pour the mixture into the boiling cream. Mix well and decrease heat to low. The cream will gradually thicken over low heat, but make sure it does NOT boil. Pour this hot custard over the dark chocolate and mix well. Pour chocolate cream into a serving glass and put in fridge to cool.

To make the banana mousse, soften the gelatine in water. Peel the bananas and mix with lemon juice and half of the icing sugar until you have a fine puree. Heat the water and add the gelatine. Pour this into the banana puree. Whip the whipping cream and add vanilla extract. Fold this carefully into your banana puree. Whisk 3 egg whites until you get snowy peaks, and add in the remaining sugar. Carefully fold this into your banana puree. Refrigerate for at least half an hour.

To assemble, take the chilled glass with the chocolate cream out of the fridge and plant Pocky sticks into the glass. Fill a piping bag with the banana mousse and fill the glass until it’s two-thirds full. Enjoy!
